Connections With Cooking And Baking Recipes

There is something special about connecting with cooking and baking recipes. Search the internet, and you will find hundreds of thousands of cooking recipe blogs. We most likely have more than one recipe book in our cupboards where we have marked our favorites. We will ask for the recipe at family and friend gatherings when food is involved because we want to try it. 
Recently, my sister asked me to make an apple pie. She said, "The one you used to make." I then recalled, "Yes, Swedish Apple Pie."  I've had this recipe for over thirty years, and it was an apple pie that I often made for family and friend gatherings. As I looked over the ingredients needed, my thoughts brought me back to when I would make this pie in my small, humble kitchen as a wife and mother to four young children. The connection was beautiful because I could not remember the last time I made this recipe. 
The Swedish Apple Pie was well-liked at our family gathering. I would like to share the recipe with all of you as well;
~Swedish Apple Pie~ 
"makes its own crust."
From the cookbook called: Recipes From Minnesota With Love By Betty Mallsow
4 cups sliced, peeled apples
2 tablespoons brown sugar
1 teaspoon cinnamon
1/2 cup butter
Pinch salt
1 cup sugar
1 cup flour
1 egg
1/2 cup chopped nuts
Fill an 8-inch pie pan with apples. Sprinkle with brown sugar and cinnamon. Mix butter, salt, sugar, flour, egg, and nuts together, and sprinkle on top of the apples. Bake at 350-degree oven for 1 hour. Serve with whipped cream or vanilla ice cream.

A Method Behind The Madness-Sharing A Memory Of My Son, Joe


                                          
Do you have things you do that only make sense to you to help get things done? One of my favorite things to do is create handmade greeting cards, and I usually bring out more supplies than I need to complete my cards. Yet I like to know I have everything at my fingertips to get things done-my method behind the madness. 
My son, Joe, also had a method behind the madness. He was a runner and had more shoes than I could count. Each pair of shoes served a purpose to him, and he would have them all lined up by the front door. One day I asked him what each pair of shoes provided. He explained to me that there was a reduced risk of injury, different shoes for different speeds, different shoes for diverse terrain, and it was simply more fun to have more options. His explanation made perfect sense to me. 
Sharing memories is part of my journey.

New Year's Eve 2021



New Year's Eve is an important day for me because, on December 31, 1981, I met my late husband, Paul. I have shared memories for the past four years. If you would like to read them, feel free to click the links below:

Looking at my red car scraper the other day reminded me of how Paul would always put it in my car for me at the beginning of the winter season. He would then take it out of my car at the end of the season, store it in the garage and then put it back in my car for the next season. This process repeated itself until he was no longer here to do that for me—one of the many little things I miss about him. I'll hold onto my red scraper and keep this memory near and dear to my heart.

Happy Birthday To My Husband In Heaven

 


Today would be my late husband, Paul's 67th birthday. His smile in this photo makes me smile. 
Although I miss him every day, I just wanted to acknowledge his birthday here on my blog.
In grief, the birthdays of our lost loved ones can bring many emotions-happiness, sadness, lonesomeness. For me, I feel a mixture of happiness and sadness. I'm happy that he was a part of my life, sad that I cannot celebrate with him today.

Sharing A Memory Of My Husband-A Cadillac Breakfast

New Year's Eve is a very significant day for me because, on December 31, 1981, I met my late husband, Paul. I have shared memories for the past three years. If you would like to read them, feel free to click the links below:

On this NewYear's eve-I would like to share a memory from our honeymoon in 1983. We received an invitation offering an opportunity to purchase a timeshare, which I talk about more in this post- 1983 Honeymoon Purchase.
In the phone call invitation, they told us a continental breakfast would be offered.  Neither of us knew what a continental breakfast was; at any rate, we thought it sounded like it would be a hearty breakfast. When we arrived at the presentation, both of us very hungry, we soon discovered that a continental breakfast consisted of coffee, juice, toast, and fruit, which was a far cry from being a hearty breakfast. We were looking forward to eggs, bacon, sausage, and hashbrowns. Not exactly what we had in mind; however, we made the best of it. This became a joke between the two of us throughout our marriage, and we renamed that breakfast "A Cadillac Breakfast." Since Paul was a mechanic, this was a unique way for us to always remember that day.
I do like sharing memories; they bring me joy.

Memories

In grief, we miss our loved ones. And rightfully so, they were and still are an important part of our lives.
Part of my journey has been reflecting on those memories. Sometimes, they bring me joy, sometimes they bring me to tears. The tears come because I would like to have more current memories, and I realize this side of heaven, I will need to live with the memories I do have. Here on my blog, I have shared memories of my son and husband, and I will continue to share them. If you would like to read them, the links are listed below:

As important as it is to reflect on those past memories, my daughter has often said, "let's start some new memories." We have been doing our best to make sure that we start new memories as well. For the third year now, we have had our very own "October Fest." We share a meal of chili, cornbread, salad, and apple crisp. This year, we added a crafting portion to our event and decorated pumpkins with sharpie markers. This was fun, and we laughed through the process. Here is a photo of our completed pumpkins:

Happy Birthday To My Son In Heaven




Today would be my son, Joe's 31st birthday.  I like sharing memories of him in previous posts if you would like to read them here:

Throughout the day today, I recalled a memory of Joe on his 16th birthday.  He was close to getting his driver's license and needed a few more hours behind the wheel with me. So, we decided to go to a sporting goods store that he liked and purchase some things he needed for his running. This way, he could pick out his birthday gift. The drive was 45 minutes, one way from our home. As we were on our way, I happen to fall asleep for a little while. When I woke up, he laughed and said, "you must trust my driving since you fell asleep.." Yes, I did trust his driving. This still makes me smile.
Recalling memories brings me comfort, especially on days like today. I sure do miss him.

Milestone Birthday


         Today I celebrate a milestone birthday, 60 years old. I'm so thankful I was able to spend time the last two days with my family having dinner and visiting.




I found this photo (above) of when I was a little girl, at the age of two years old. My face shows so much joy. As I was looking at this photo, I started thinking, how can we keep the joy of a young child when life brings us times of difficulties and uncertainties? I thought I would share a few things that came to my mind to keep the joy:
~Spend time with young children, their joy is contagious.
~Find time to be with family and friends as much as possible.
~Try to think of something to be thankful for each day.
~Read Scripture verses. God's word is alive in the Bible. The Psalms and Proverbs are so comforting.
 ~Focus on the love God has for all of us. "Give thanks to the God of heaven. His love endures forever. " Psalm 136:26.

Today would be my husband Paul's 66th birthday. When I first met him, he would say "it's just another day." As time went on he did start to like celebrating birthdays. In 2016 he even chose the location to celebrate.
I sure do miss him.

On This Day 37 Years Ago

On this day, April 23, in 1983, Paul and I began our lives together as husband and wife. Paul was 28 years old, and I was 22 years old. The Lord blessed us with a wedding day that was filled with love, laughter, joy, and happiness as we celebrated with family and friends. Right now, it warms my heart thinking about what a fantastic day it was.
This is the fourth year without Paul here to celebrate our wedding anniversary together. Honestly, I wish he was still here, I miss him, and I often wonder what our lives would have been like.
Yet, I know I must face reality and continue my life in the best way I can. I'm thankful for the love and support from family and friends. The Lord is with me now, just as He was on my wedding day. His word in the Bible brings me comfort. As I take time to look up the word comfort in the Concordance of my Bible, I found the following verses, and I would like to share them with you. May you find comfort in these Bible verses as well:
  • "Blessed are those that mourn, they shall be comforted." Matthew 5:4
  • "Now may the God of hope fill you with all joy and peace in believing, that you may abound in hope by the power of the Holy Spirit." Romans 15:13
  • "Blessed be the God and Father of our Lord Jesus Christ, the Father of mercies and God of all comfort; who comforts us in all our affliction so that we may be able to comfort those who are in any affliction with the comfort with which we ourselves are comforted by God. For just as the sufferings of Christ are ours in abundance, so also our comfort is abundant through Christ." 2 Corinthians 1:3-6
  • "God is our refuge and strength a very present help in trouble." Psalm 46:1
As I reflect on this day, I will take comfort in the memories, I will take comfort in the love of family and friends, and I will take comfort in God's Word.

Thinking Of My Son Joe On His 30th Birthday

Today, August 25, 2019, would be my son Joe's 30th birthday.  As I type these words, tears are falling down my face, not wanting this to be my reality. However, this is my reality. Psalm 56:8 "You keep track of all my sorrows. You have collected all my tears in your bottle. You have recorded each one in your book."  There will always be the questions I have- What type of job would Joe have now?  Where would Joe be living? Would Joe be married? Would he have children? Those questions will remain unanswered this side of heaven.
 I have made a choice not to focus on his death; instead, I have chosen to focus on how he lived his life while he was here for 18 years.  I think back to Joe's 4th birthday. On that morning when Joe woke up the first thing he did was, he looked at his hands, I asked him "why are you looking at your hands?' he said, "to see if they got bigger now that I turned four." This still makes me smile, it was such an innocent and precious thing to say and truly reflects the innocence of a four-year-old.
Joe wrote the following in one of my birthday cards when he was 16 years old, yes, I do tend to save things 😊
"Thank you for all you do for me. It is a blessing for me to be your son. Happy birthday, Mom. Joe". 

I had dinner with a friend recently, and I told her that I have made a choice to focus more on how Joe lived his life rather than his death. She said, "because otherwise, you would always be sad."  This is precisely why I have made this choice.

Remembering My Husband On His Birthday

Today, July 14, 2019, would have been my husband Paul's 65th birthday. In my heart, I feel it is important to acknowledge his birthday as I did in this post http://ajoyfulheartjourney.blogspot.com/2017/07/missing-my-husband-on-his-birthday.html and in this post http://ajoyfulheartjourney.blogspot.com/2018/07/missing-my-husband-on-his-birthday.html
He will always be an important part of my life and never to be forgotten.  I miss him every day, and I know too, my three daughters miss him every day as well.  
In my tears, I turn to God's Words in the Bible for comfort because His Words are alive and active and are never to be turned void.  In Revelation 21:3-4, "Behold, the tabernacle of God is among men, and He shall dwell among them, and they shall be His people, and God Himself shall be among them. and He shall wipe away every tear from their eyes, and there shall no longer be any death, there shall no longer be any mourning or crying, or pain; for the first things have passed away." 
Jesus, the Son of God, will wipe our tears, and there will no longer be any death, and we will be with our loved ones forever in heaven.
God sent his Son Jesus to take all of our sins, past, present, and future sins to the cross.  He did this for you and me and for all our loved ones. In John 11:25-26 "Jesus said, I am the resurrection and the life, he who believes in Me shall live even if he dies, and everyone who lives and believes in Me shall never die."  This is a promise we can hold onto.

Reflections At 11 Years

Today my reflections turn to 11 years ago, today my son Joe passed away. Of course, I miss him every day and this day invokes many thoughts of what would he be doing now, and how I would love that he was still here. I'm so very thankful he was here for 18 years. He was the third born of our four children and was our only son. He participated in just about every sport from the time he was three years old-baseball, soccer, hockey, football and lastly probably his most favorite was cross country running. Another thing he enjoyed was drawing and painting. I would like to share a couple of his paintings:
I also want to share one of my all-time favorite photos of our foursome. In my humble opinion, I feel the candid photos are the best.  This shows their personalities.   
For the past five days, I have to admit I have been crying a lot. I didn't try to fight the tears, I just allowed myself to cry. Yesterday Saturday, April 27 the verse of the day came up on my phone "Blessed are they that mourn, for they shall be comforted" Matthew 5:4. Was this a coincidence?  I would have to say this was not a coincidence. This was the Lord's way of showing comfort to me.

New Year's Eve 2018

Here we are New Year's Eve 2018. I feel the year went by so fast, how about for you?
I continue on this journey of finding joy through grief.  I'm so very thankful for family and friends that give their love and support to my daughters and myself. 
Since 1981 New Year's Eve has been very special because that was the night my husband Paul and I met. His big brown eyes and great big smile are what took my breath away and he told me of all the girls he saw that night I was the one he wanted to get to know.  Little did we realize that night that we would get married and have four amazing children together.
Each New Year's Eve since 1981 we always went on a "date night" as a way to remember and celebrate our first night of meeting each other.
This is the second New Year's Eve without Paul and I have to say that I'm feeling sadness and happiness.  Of course, I'm sad he is no longer here, yet I'm happy that we had so many wonderful moments together.  So today, I went through photos from our Florida Honeymoon in 1983. It's been so fun to reminisce and share the photos with my daughters. I love the smiles on our faces.
